Experiments with veggies

On Thursday we got a whole load of curly kale in our veggie box. And I really do mean huge quantities of the stuff. It was a little daunting. I googled for recipes and came up with a curly kale and potato risotto. As I’m a big fan of risotto I decided to give it a go. Phi, being the gallant kind of guy he is, came along for the ride.

Tonight, as we discussed a variety of topics in our tiny kitchen, the dish came together and while perhaps being a little odd to contemplate, happily cooked as any risotto does. Yes, that was a lot of starch but the potatoes were well matched with the rice. The kale was … strange. Not awful but then not good either. (And I only added half the listed amount!) I suspect other green veggies, spinach perhaps, might be a more suitable ingredient for risotto.

A great experiment but not a successful recipe. We continue to search for the ultimate kale recipe that tastes like something we’d want to eat.

    I don’t know that one, I will check it out. I usually just enter the appropriate veggie name in google and press send.

    Well, you’ve probably consumed or otherwise disposed of your kale by now, but obviously what you needed to prepare was some stampot. (here’s a recipe in case you get your hands on more kale http://www.theworldwidegourmet.com/vegetables/cabbage/dutch-stampot.htm) (sounds sort of like your recipe but without the rice). It’s key to have something salty and greasy on the side, like a sausage (or some cheese grated on top would probably be good, too, if you’re not into meat) Be sure to cut up your kale into small pieces, so they mix through the potatoes well.

    Sadly, I can eat neither sausage nor dairy, so I’m clearly not meant to win on the kale front! *sigh*
