I just ran across a Flickr photo from Hong Kong called “The chopper” by the excellent ahyc. Where I grew up in north Texas there was a BBQ joint where they had a “chopper” who used a huge cleaver in his right hand and wore a chain mail glove on his left. Man, did that knife fly! I never once saw it hit the glove; lord knows it wouldn’t do anything good to the edge of the blade if it did.
